Atsumeru is built around a single omakase-style tasting menu, served in seatings timed through the evening rather than an open dining room. Chef Devin Denzer's cooking draws on Nordic and Japanese traditions, filtered through his own Midwest upbringing, and that point of view runs through the whole experience rather than just the plates.
