Schwa has been fine dining's id since 2005: a tiny BYOB room where Michael Carlson and a crew of cooks — no servers, no sommeliers, no cushion — run a tasting menu that has always been brilliant and has never once been corporate. The quail egg ravioli is canon. The playlist is loud.

Two decades of cooking on its own terms, with Beard-finalist years to show for it, and now a Michelin star hanging in a room that visibly does not care. Chicago dining has an establishment. Schwa is its loyal opposition, and the city is better for it.

The Spot
Schwa is a small storefront on Ashland Avenue in West Town, run by chef/owner Michael Carlson alongside chef de cuisine Caleb Trahan and executive sous chef Jose Duran. The restaurant is BYOB, a detail that's become part of how people talk about the place as much as the food itself.

Michelin has awarded Schwa one star nearly every year since 2011, including 2023, 2024, and 2025. Carlson was also named a James Beard Award finalist for Best Chef in 2010, 2011, and 2012, and a semifinalist in 2013. Chicago Magazine included Schwa among the city's best restaurants in 2025.

Reputation here splits sharply. Some describe the food, service, and energy as living up to that long run of recognition, calling it a local gem worth the effort. Others describe a loud room and blunt service that doesn't land for everyone, and question whether the accolades hold up night to night. That divide has followed Schwa for years, running alongside its steady accumulation of stars.
