Austin Oyster Co. started with its team shucking oysters at customers' homes before landing on the corner of Pedernales and East Cesar Chavez Streets, inside a 1950s craftsman house in East Austin. The raw bar sits at the center of the restaurant, drawing inspiration from East Coast oyster bar traditions.

Oysters come from the team's own farm, Lone Pine Ranch in Brunswick, Maine, served alongside selections from trusted farms across New England and Canada. The rest of the menu is built to balance familiar raw bar staples with dishes meant to stand on their own.
