Fiasco BBQ started as a backyard project for Eric Hastings before growing into a food truck that made stops around Austin. It's since found a permanent home at Dainty Dillo in Govalle on the east side, where the trailer setup and outdoor seating under oak trees keep its mobile origins visible.
The smoker turns out brisket, turkey, ribs, and jalapeno cheddar sausage, alongside a smoked burger that's built a following of its own. Sides break from the standard barbecue lineup: potato salad dressed in yogurt instead of mayo, a cucumber, feta, and olive salad, and a bean salad.
