The Spot
CM Smokehouse runs out of Bouldin Acres, the food truck park at 2027 S Lamar. Chef Cade Mercer keeps a few standards on the menu — pulled pork and chopped beef sandwiches — but the trailer is better known for where it goes from there: a Brisket Crunchwrap, smoked-and-fried Baby Back Rib Wings, and Pork Crispito Tacos sit alongside a Mushroom Swiss Burger and a Brisket Patty Melt.

Mercer grew up near Seguin and New Braunfels and worked through Texas's barbecue scene before this — time at Lambert's, a stint helping open EastSide Tavern, and menu work at Guess Family BBQ and Koko Ramen in Waco. He left Guess Family in November 2020 to build his own concept, partnering with Bouldin Acres to bring it to South Lamar.

Texas Monthly's Daniel Vaughn summed up the approach directly: "Bored of 'just a barbecue platter,' Cade Mercer has created an experimental new menu at his CM Smokehouse trailer in Austin."
