Blue Apsara is a food truck on S Lamar billing itself as Austin's first Cambodian trailer, working from family recipes and made-fresh street food.

The menu runs through Cambodian street food staples: Cambodian Beef Sticks, lemongrass-marinated and grilled, served with pickles and rice; a green papaya salad with adjustable spice; and Cambodian Chicken Curry built on coconut curry with gentle spices. Fish Amok — fish steamed in coconut curry and served in a banana leaf — is the dish most often singled out by regulars. Prahok K'tis, a coconut dip made with fermented fish and minced pork, rounds out the menu's savory side.

Everything is made fresh, and the operation carries the feel of a family kitchen rather than a commissary — part of what's built it a reputation as a hidden gem in Zilker.
