Zeppelin opened in 2019 in Shaw, its name a reference to the great passenger airships of the early 20th century. Behind the sushi bar is Chef Minoru Ogawa, a Tokyo native and second-generation sushi chef who trained under his father in the Nippori section of Tokyo — a family legacy spanning over 50 years, with both his father and brother recognized as master sushi chefs in Japan. Ogawa, who also owns Sushi Ogawa, imports fish directly from Tsukiji Market for the restaurant's Edomae-style nigiri and omakase bar.
Alongside the sushi program, the kitchen runs a Japanese charcoal grill for yakitori, with skewers and sashimi rounding out the menu. Regulars point to the miso black cod as a standout.
The space itself is built for more than one kind of night — a sushi bar, a main dining room, and a karaoke setup that kicks in later in the evening. Zeppelin was brought to life by Ogawa alongside partners Adrian Williams, Ari Wilder, and Micah Wilder of Chaplin's.
