Oyster Oyster built a starred tasting menu almost entirely from plants and the occasional bivalve, and made sustainability read as luxury instead of penance. Rob Rubba's cooking — mushrooms with the gravity of aged beef, breads and ferments layered for depth — won him the Beard Foundation's Outstanding Chef title.

The discipline is total: local, seasonal, low-waste, and none of it announced with a lecture. You could eat the whole menu and never once think about what's missing. That's the achievement.

The Spot
Oyster Oyster is a vegetarian and vegan restaurant in Washington, DC, serving local and seasonal cuisine. Sustainability extends beyond the kitchen into how the restaurant operates and communicates — its site devotes standalone sections to sustainability and to a feature it calls the Shroom Room, pointing to mushrooms and produce as the focus of the cooking rather than meat or seafood.

The restaurant has been named to Eater's Eater 38 list of essential DC restaurants and to Washingtonian's 2025 best-of list. Michelin has awarded Oyster Oyster one star every year from 2022 through 2025, after a Selected listing in 2021. The James Beard Foundation named it a Best New Restaurant finalist in 2022, and its chef won the Foundation's Outstanding Chef award in 2023.
