Menya Hosaki sits on Upshur Street NW in Petworth, a compact ramen shop built around a simple standard: broth, noodles, tare, and chashu are all made in house rather than sourced out. Chef-owner Eric Y. trained under Keizo Shimamoto of Ramen Shack and under Koitani San of Jiraigen at RAJUKU before starting a pop-up at Junction Deli in Maryland that built a following across the DMV ahead of opening this permanent spot.
The regular menu stays tight, supplemented by a special bowl of the day, including a dedicated tsukemen offering. Diners eat close to the kitchen at counter and bar seating, watching the bowls come together in real time.
