Ltd Edition Sushi runs the omakase format that defines high-end sushi counters everywhere, but the details are what set it apart. The uni service is the signature: sea urchin handed over in a hand roll from a cart, delivered with the theater of a street vendor rather than the hush most sushi rooms insist on. It reframes what luxury ingredients are supposed to feel like — playful instead of precious.

The sake pairing does real work too. Pours come generously and often, refilled before the glass empties rather than metered out course by course, which changes the rhythm of the whole meal. Whether you land at the counter or a high-top, the room stays intimate — a small, dim waiting area that sets the tone before a single course arrives, groups murmuring to each other while they wait to be seated.

The wine list backs up the sake program with real depth, enough that the James Beard Foundation named it a semifinalist for Outstanding Wine Program. The New York Times put it on a national list in 2023, and Seattle Met has kept it on the city's own. Capitol Hill has no shortage of omakase options. This is the one worth the wait.

Ltd Edition Sushi runs one Omakase menu and nothing else, capping service at 30 orders a day to keep the fish at peak freshness. The room is small by design: 8 seats at the sushi bar and 6 at tables, built to echo the intimate counter-style sushi-ya found throughout Japan.

Chef Keiji, born and raised in Fukui, Japan, trained under Shiro Kashiba at Sushi Kashiba after apprenticing at Sushi Kappo Tamura and working at Shiro's Sushi. Alongside the omakase, the restaurant pours a limited, temperature-controlled sake selection chosen specifically to pair with the menu.

The restaurant has drawn recognition well beyond the neighborhood: Eater named it to its Essential 38, Seattle Met included it on its 2025 best-of list, The Infatuation scored it 8.6, and The New York Times featured it on The Restaurant List in 2023. The James Beard Foundation named it a 2025 semifinalist for Outstanding Wine Program.
