Jackalope Tex-Mex & Cantina came from Jack Timmons, who built his reputation smoking brisket at Jack's BBQ starting in 2014, and Graham Ayers, a longtime Columbia City resident who spent years as GM of Jack's BBQ SoDo before the two partnered on this project. The idea was to take Jack's smoked meats and route them into Tex-Mex format — tacos, enchiladas, and fajitas built around the same barbecue.
