Pancita

Pancita began as a six-month pop-up inside Pair, a former French room in Ravenna, and earned itself a permanent lease. The connection to one of the world's most celebrated restaurants brought attention fast, but the plates back it up more often than not.

The Caesar makes the clearest case: radicchio, castelfranco, and cilantro tossed with a serrano-spiked dressing, cotija-crusted tortilla chips worked into nearly every bite. Brisket street tacos, tender and reasonably priced, and a half chicken finished in a deep, dark mole show a kitchen working with real technique and a clear point of view.

Consistency isn't perfected — some nights the dressing tips too salty, the brisket dries past its window — but the ceiling here is high enough to outweigh the occasional off night. This is a kitchen chasing something specific, and hitting it often enough to matter.

Two consecutive years as a James Beard Best Chef semifinalist, plus an earlier Emerging Chef finalist nod, confirm what the plates already argue: Ravenna has something real on its hands.
