Mister Pio keeps its focus narrow: rotisserie chicken, done a specific way. The birds are all-natural, humanely-raised Bell & Evans poultry, marinated for 48 hours in what the kitchen calls an old family recipe — a 22-spice rub — before going on the rotisserie. Produce comes from Steadfast Farm in Mesa and shows up in the side salads served alongside the chicken.
