The Herbivorous Butcher began in 2014, when Aubry and Kale Walch brought a small lineup of vegan meat alternatives to the Minneapolis Farmers Market. The response was strong enough that the siblings opened a brick-and-mortar shop in 2016, billing it as the first vegan butcher shop in the country.
The shop operates as a working butcher counter built entirely around plant-based products: house-made vegan meats and cheeses sold by the piece, alongside sandwiches and ready-to-eat specials made in-store. The local menu changes regularly, and products are also shipped nationwide.
Minnesota Monthly has included The Herbivorous Butcher in its coverage of the Twin Cities dining scene.
