Dario sits in a quiet pocket of the bustling North Loop, founded by industry veterans Joe Rolle and Stephen Rowe. The restaurant describes its own dining experience as "energetic sophistication," built to work for a weeknight drink and a plate of pasta at the bar or a longer, multi-course sit-down.

Chef Joe Rolle leads the kitchen after nearly two decades cooking in the Twin Cities, including time at The Dakota under Jack Riebel and stints at Martina, Il Foro, and Borough. The menu runs on handmade pastas and seasonal vegetables, shaped by Rolle's North Woods upbringing and travels, and changes with the seasons. Beverage Director Stephen Rowe, a founding team member of Marvel Bar, runs a cocktail program built to stand on its own alongside the food, including a spirit-free offering meant to match the depth of the full-proof drinks. An extensive Italian wine list rounds out the table.
