Josephine's plays a specific game: southern cooking filtered through Houston's actual population, not a postcard version of the South. The room could pass for another decade if not for the TVs over the bar, but the plates refuse nostalgia. Raw blue crab comes with unexpected spice and Vietnamese flavor. Redfish gets rubbed in chermoula. Okra succotash sits under roasted chicken with African influence stitched through it. A southern pea salad reads like something off a family potluck table, then turns out smarter than that description suggests.

That's the trick here — dishes that look familiar and taste like a city that doesn't cook one cuisine at a time. Nothing on the menu leans on cliché to get by, and nothing needs to. The Gulf Coast seafood is the spine, and everything grafted onto it earns its place.

Michelin selected Josephine's in 2025, and it's landed on national recognition lists beyond that. Both track what's obvious at the table: a kitchen using Houston's actual diversity as a working method, not a marketing line, and pulling off a plate of food that could only exist here.
