Safta is chef Alon Shaya's Denver restaurant, part of his Pomegranate Hospitality group, set in Five Points. The kitchen builds its menu around the layered history of Israeli cuisine, drawing on threads from the Middle East, Europe, and North Africa — specifically flavors tied to Bulgaria, Yemen, Syria, Morocco, Turkey, and Greece. Wood-fired pita, baked steps from the table, is the constant that runs through the meal.
From there the menu has included labneh, kofta, matzo ball soup, lamb ragu, and Persian rice, with baklava showing up at the end. Brunch is also part of the lineup alongside the regular menu.
Michelin has named Safta to its Selected list in 2023, 2024, and 2025, and StarChefs recognized the Denver kitchen as a Rising Star in 2022.
