Molino Chido operates out of Stanley Marketplace's west entrance, built on a daily ritual of grinding fresh corn each morning for its tortillas. The taco lineup ranges from carnitas to cauliflower, and the kitchen names a roster of regional purveyors it works with, including Bow & Arrow Corn, Centennial Meats, Esoterra Farms, Haykin Cider, Rock River Ranch, and Kansas City Chiles among others.
The bar side pours bold spirits and low-intervention wines inspired by CDMX street culture, alongside a rotating "Chido Hour" menu of snacks and shared bites. The name nods to a dual heritage — de aquí y de allá — pairing traditional technique with a more contemporary sensibility.
