The Spot
Linger occupies a former mortuary in Lower Highland, and the building's past still shows up in the decor — macabre touches layered with posher details throughout a window-lined dining room overlooking the neighborhood. Executive chef Aaron Boisvert and chef de cuisine Carlos Vera lead a kitchen built around flavors drawn from street food and small, makeshift kitchens around the world, translated into a shareable-plates menu. Reviewers point to potstickers, bao buns, devils on horseback, sliders, duck dishes, ramen, and sweet potato waffle fries, with weekend brunch and a donuts option in the mix as well.

The rooftop patio is the building's signature feature, built around a 1975 GMC RV that serves as the bar and a repurposed food truck that functions as the kitchen. Linger is part of Edible Beats, the Denver restaurant group behind Root Down, Vital Root, and El Five — an employee-owned company that shares gratuities across its hourly staff.
