Chivis Tacos traces back to a single food truck in 2012 and has since grown into a multi-truck operation with a permanent restaurant at 2101 E Colfax Ave. The brick-and-mortar space expanded the menu while the original trucks keep working the city.
The lineup leans on street-taco basics: Carne Asada Tacos with grilled steak, onions, and cilantro; QuesaBirria Tacos, slow-cooked beef served with consommé for dipping; and a signature Chile Relleno Burrito filled with rice, cheese, and grilled steak.
