Stillwell's takes its name from Hallie Stillwell, a Texas cowgirl, and leans into the ranching heritage of the state throughout its design and menu. The restaurant sits inside Hôtel Swexan in Oak Lawn and serves HWD — Harwood Premium Beef — an Akaushi cattle program raised through a partnership between Harwood and ranches in Texas and Oklahoma, giving the kitchen a cut of beef exclusive to Stillwell's.

The menu blends traditional steakhouse fare with more adventurous dishes, and a shellfish tower has become a standout among regulars. The wine program is a particular point of pride, built on older vintages from top global producers along with selections chosen exclusively for the restaurant, and it holds a Wine Spectator "Best of" Award of Excellence.

Michelin has selected Stillwell's in both its 2024 and 2025 Dallas guides, citing the restaurant's cuisine, ambiance, and service.
