Pappas Bros. is the platonic ideal of a steakhouse, and it earns that by doing the unglamorous work most steakhouses skip. The beef is butchered and dry-aged in-house for at least 28 days, and if you catch them right, they'll walk you to the case and let you pick your own cut. That's a level of control most places in this category talk about and don't actually practice.

The room plays it straight: cavernous, formal, full of dressed-up couples and families minding their kids. It's the kind of place that asks you to take the occasion seriously, and the food backs up the request. A filet arrives perfectly cooked, crusted right, no apology needed. The wine list runs nearly 200 pages, which sounds like excess until you realize it's built to actually match the food, not just impress.

The location is a strange one, wedged into a stretch of freeways and sister restaurants in North Dallas, and it takes real effort to get there from most of the Metroplex. Go anyway. The Houston original may have a slight edge, but this branch isn't a diminished copy — it's the same standard, executed at the level that made the original a benchmark for the entire state.
