Pearl traces back to a Nobu counter in another city, where Shine Tamaoki spent years selecting fish for a young regular named Naomi, whose father Todd Landis eventually partnered with him to open a place of their own. That friendship became Pearl in 2023, with Landis designing and building the space and Tamaoki developing the menu alongside general manager Kaya Turner.
