Knox Bistro sits just off the Katy Trail in Knox-Henderson, one of several French concepts from Travis Street Hospitality, the Dallas group founded by Stephan Courseau and Daniele Garcia that also runs Le Bilboquet, Georgie, and Frenchie.

Executive chef Armand Brunner trained at Ferrandi Paris, apprenticed at the French Senate studying gastrodiplomacy, and worked in the Paris kitchens of Frederic Simonin and Pierre Sang before serving as sous chef at Le Beurre Noisette. Chef de cuisine Cedric Vernin, a native of Roanne, joined the kitchen in July 2025 after training in Lyon, working at Bistro Provence, and teaching at the Culinary Institute Lenotre.

The restaurant runs across lunch, brunch, and dinner, with a seasonal menu and a pastry program that draws regulars back on its own.

Michelin selected Knox Bistro in both its 2024 and 2025 Texas guides, describing it as a "bright and breezy bistro" staffed by an "experienced team of French émigrés."
