Georgie has changed kitchens more than once, and it keeps landing on its feet. The current version leans hard into French technique — duck cooked with real precision, sauces built to be fought over, the kind of jus you want to spoon straight from the plate. Chilled oysters get a passionfruit granita for lift. Salads have actual life in them. The sourdough and French butter alone justify skipping the entrée and just drinking Sancerre for an hour.

The room does real work here too. Retro orange and blush tones, velvet banquettes, a look distinct enough that other Dallas restaurants have visibly borrowed from it since. It reads equally well for a couple splitting a bottle and a table of executives splitting three — rare for a dining room this photogenic to also function as a place people actually linger.

A James Beard Emerging Chef finalist nod and consecutive Michelin selections back up what's on the plate, but the case was already made before those showed up. Georgie has survived turnover that would have sunk a lesser kitchen and come out sharper. That's the harder trick, and it's the one that matters.

The Spot
Georgie pairs a butcher shop with a full-service dining room, the two spaces linked by design — the private dining room looks through custom canning walls to the restaurant and on to the butcher shop itself. The concept was built around delivering a world-class dining experience executed to a high culinary standard.

Chef Bruno Davaillon now leads the kitchen, bringing refined, seasonal French cooking grounded in classical technique. Trained in France's Loire Valley, he worked in restaurants across Paris, London, and Los Angeles before running kitchens at Alain Ducasse's Mix in Las Vegas, Rosewood Mansion on Turtle Creek, and Bullion, both in Dallas. Executive Pastry Chef Dyan Ng, who previously worked alongside Davaillon under Alain Ducasse, rounds out the kitchen's leadership.

Georgie was a StarChefs Rising Stars pick for Dallas-Fort Worth in 2021 and has been selected for the Michelin Guide's Texas edition in both 2024 and 2025. In 2025, the kitchen earned a James Beard Foundation Emerging Chef semifinalist nod followed by a finalist selection. The Infatuation scored the restaurant 9/10. Diners frequently single out the truffle preparations, potatoes, bread, and steak.
