Carbone opened in the Dallas Design District in 2022, part of Major Food Group's roster of Carbone restaurants. Chef Mario Carbone, a Queens native who trained at the Culinary Institute of America and spent a year cooking in Italy, built the menu around the Italian-American dishes of his childhood — Caesar Salad alla ZZ, Carpaccio Piemontese, Baked Clams, Veal Parmesan, and Ribeye Diana among them — prepared with fine-dining technique and top-tier ingredients.
Meals open with a shared spread of parmigiano, bread, and cured meats before anyone orders, and tend to close with the restaurant's carrot cake. Service runs on what the restaurant calls "A Piacere" — captains in burgundy tuxedos built to give guests exactly what they want, down to how a martini gets built.
The room was designed by Ken Fulk, mixing Venetian palazzo grandeur with midcentury swagger. Robb Report named Carbone Dallas to its Best New Restaurants list in 2026.
