Noriko Handroll Bar sits in the lower level of Perilla Fare on North Milwaukee Avenue — guests enter through Perilla Fare's doors and are directed downstairs by a host. The format is narrow by design: handrolls made to order and passed across the counter one at a time, meant to be eaten within seconds of being handed over. Every seat in the room functions as a chef's counter, putting diners directly in front of the person making their food.
Chef partner Billy Lim came up through a sushi spot in Northbrook, working from the tempura station before training under Chicago sushi chef Toku Iwamoto. Chef partner Rhan Whang led kitchens at Cabra and returned to Girl & the Goat as CDC before joining Noriko. The two are part of a partner group that built the restaurant together, operating under ESD Hospitality Group.
