Flo has been serving southwestern food out of West Town since 1999, built on imported Hatch green and red chile shipped in from New Mexico. The cooking leans into that chile-forward, traditional New Mexican style rather than a generic Tex-Mex approach.
The room changes character with the clock — vibrant and casual through the day, more intimate once evening service starts. Weekend brunch is a particular draw, with homemade hot sauces and strong bloody marys among the regulars' favorites, and vegetarian options are available across the menu. Flo also hosts a seasonal supper club and offers catering for private events and dinner parties.
