CH Distillery has been producing spirits in the West Loop since 2013, milling, mashing, and fermenting its own vodka, gin, rum, aquavit, and bourbon on-site — the name is a nod to Chicago and to carbon and hydrogen, the elements at the base of alcohol. Attached to that production space is CH Bar, home to Jōtō Sushi, which runs the food program alongside the house cocktails and spirits.
