Mercado Sin Nombre is a roaster, tortilleria, and bakery working out of an alley off East 5th Street, and it runs all three at once without any of them feeling like an afterthought. Corn is the whole argument. It shows up nixtamalized in the atole cortado, cut with piloncillo for sweetness, and it shows up as the base of a s'mores masa Twinkie filled with fermented chile ganache and finished with toasted marshmallow — the kind of dish that sounds like a gimmick and turns out to be genuinely built.

The room doesn't try to be anything. Tables are milk crates and plywood, seating is a backless stool, and none of it matters once the pastries and corn soda show up. Weekends bring a market and a crowd; go on a weekday and you'll get a stool without a fight and the same food.

The Beard Foundation named it an Outstanding Baker semifinalist, Michelin gave it a Bib Gourmand, and it's landed on national recognition lists beyond that. None of it explains the place better than the Twinkie does. This is corn cooking with real technique behind it, dressed down enough that you'd miss the ambition if you weren't paying attention.

The Spot
Mercado Sin Nombre started in 2020 when Maltby began selling homemade tortillas, an idea that grew out of his master's dissertation in architecture at the University of New Mexico. That interest in masa as both material and craft still runs through the café, which works with heirloom Mexican corn and specialty coffee sourced from small farms in Mexico and roasted in Austin.

The menu is built around masa in its many forms: an egg sandwich cradled in a blue corn biscuit that takes 100 hours to make, masa pancakes, burritos, and a dessert modeled on a Twinkie, filled with chili-spiked chocolate ganache and topped with toasted marshmallow. A coiled honey bun scented with cardamom has also drawn attention.

The café has picked up national notice — a James Beard Foundation semifinalist nod for Outstanding Baker in 2026, a Michelin Bib Gourmand in 2025, and a place on Eater's Essential 38.
