Cane serves Trinidadian food with a point of view: Afro-Indian street food and island traditions, cooked with the kind of precision that turns a snack into an argument. The doubles arrive overflowing with curried chickpeas, and the painting of Obama eating them by the door isn't decoration so much as a thesis statement about what this dish means to people.

The jerk wings are the proof. Marinated for 24 hours in scotch bonnet, cumin, and paprika, then smoked for three hours, they disappear off the table fast enough that finishing a plate solo starts to feel like an accomplishment. The oxtail and the snapper escovitch carry the same weight — dishes that don't need reinvention, just someone who respects what they already are.
