Mashiko opened in the Junction in 1994, with a founder who wanted the restaurant to use food as a way of bringing people together while working within and against Japanese culinary tradition. In 2009, that philosophy turned into a hard rule: sustainable seafood only, regardless of cost, a commitment the restaurant has maintained since.
Ten years later, ownership passed to two longtime employees who trained under the founder and have continued running the restaurant with the same sourcing standard. Mashiko operates as a sushi bar built around that commitment, and has built a reputation among regulars for authentic, well-executed Japanese cooking and attentive service in a longstanding West Seattle neighborhood spot.
