Paffuto came together as a joint project between three friends — Jake Loeffler, Sam Kalkut, and Danny Griffiths — all trained at the CIA with backgrounds that include Laurel, Jean-Georges Philadelphia, Vernick Fish, Boka, Kensington Quarters, and Fork. All three grew up around Italian food in their families, which pointed the concept toward Italian cooking from the start.

The restaurant sits at 1009 S 8th St in Bella Vista, in the space that formerly housed Chef Pierre Calmels's Bibou.

The menu runs coffee, breakfast, lunch, and pastries, with dinner service added on select nights. Panzerotti has become the dish regulars mention first, and the pastry case has built its own following in the neighborhood.
