Café Diem is a small, family-run bistro on S 8th Street in Bella Vista serving Vietnamese soups and classic dishes in a plain, no-frills room. It's cash only, a detail regulars have long since worked around.

Pho anchors the menu in several builds: dac biet loaded with steak, flank, brisket, tendon, and tripe; chin gan with brisket and tendon; tai bo vien with steak and meatballs. Bun bo hue, the spicy beef and pork noodle soup, has developed a following of its own. Beyond the soups, the menu runs through rice plates like com bi cha thit nuong, vermicelli bowls, egg rolls, spring rolls, and banh xeo, the Vietnamese crepe filled with pork and shrimp.

The restaurant has built a base of long-term regulars who treat it as a neighborhood fixture, drawn by consistent food, good value, and service shaped by years of familiarity.
