Càphê Roasters

Càphê Roasters treats Vietnamese coffee as a small ceremony worth watching. The espresso beans are roasted in house, and the egg coffee gets built in full view at the counter — condensed milk whipped into froth, stirred into the coffee in a motion that's part of the draw. The room backs that up: tall windows, real daylight, shelves of books for anyone who wants to stay a while.

The kitchen doesn't coast on the coffee's reputation. The fried chicken bánh mì comes glazed in gochu heat instead of the usual sweetness, and the tam gia vi potatoes, jalapeño-topped, disappear like a snack food despite being a real dish. A sesame matcha latte and fried banana mochi round out a menu that's clearly been thought through rather than bolted onto a coffee concept. Most of it travels well, too, which matters in a neighborhood built around people moving fast.

The Beard Foundation named it a semifinalist for its wine program this year, an unusual distinction for a café and a sign of how seriously the place is run beyond the espresso machine. Local coverage has taken notice as well. None of it reads as hype. It reads as a spot doing more than its category requires.
