Noko has been doing this long enough that it now reads as a fixture rather than a discovery, and the reason is simple: the food hasn't coasted. The menu still runs its four lanes — fresh and bright, rich and savory, wood-fired, smoked — and each one still hits. Hamachi crudo sliced thin enough to disappear on the tongue, milk bread stuffed with lobster, crab fried rice slicked in wagyu fat, a wagyu brisket that holds its texture through the smoke. A brownie built around a sesame cookie closes things out with the same confidence.

Junior's cooking here treats Japanese technique and American ingredients as equal partners rather than a fusion gimmick, and the Porter Road room backs it up — an open-air patio that turns the whole thing into an occasion without asking you to dress for one. It works for a first date, a solo seat at the bar, an anniversary. That range without a drop in quality is the hard part, and Noko clears it.

The expansion into Kase x Noko next door hasn't diluted the original. A James Beard semifinalist nod for Best Chef in the Southeast just confirms what the plates already argue: this is a kitchen still operating at its own high bar.

The Spot
Noko brings Asian-inspired, wood-fired cooking to Rolling Acres in East Nashville. It was founded by Jon Murray together with Executive Chef Dung "Junior" Vo and Managing Partner Wilson Brannock, who have described the restaurant's guiding belief simply: take care of your people, and everything else follows.

That philosophy has translated into steady recognition. Eater named Noko to its Nashville 38, and Chef Vo was named a James Beard Foundation semifinalist for Best Chef in the Southeast in 2025. Nashville Lifestyles named Noko a city magazine favorite the same year, and regulars consistently point to the service and consistency behind it.
