Kosho argues its case in two directions at once: a hot pot built for real heat and savor, and a run of small plates sharp enough to stand on their own. The hamachi arrives absurdly tender, the dumplings hold a genuine contrast between steam and a crisped edge, and the hamachi kama yakitori has the kind of char and fat that makes you order a second round before finishing the first. Lean into the hot pot or build a meal from the small plates. Either way works.

The room is long and slim, minimalist without going cold, and it walks the line toward stuffy without quite tipping over. Sit at the counter. The staff runs the place with real attention, the kind that makes a weeknight dinner feel like an occasion without the theater getting in the way of the food.
