Our Take

The Gibson Room used to be a strange, ambitious thing wearing a casual bar's clothes — tamales en cazuelas with foie gras served under string lights. That version is gone, and the trade turned out to be the right one. The kitchen now belongs to Miami Slice, and the menu has simplified into exactly what a Coral Way crowd actually wants: steak, a wedge salad, popcorn chicken for passing around the table, and pizza that earns top billing.

None of it reads as a retreat into safety. A burger and a wedge salad can be a lazy kitchen's crutch, but here they're done with enough care to anchor a real dinner, dressed-up or not. The cocktail list does the same work the food does — a drink built to taste like pizza, another like banana, strong pours at a fair price. It's a small menu that never once feels thin.

The Michelin Guide took notice in 2026, selecting the restaurant for its current run. That's confirmation of something the room already proves on its own: a concept willing to abandon its own ambition in favor of doing simple things exceptionally well. Go for the pizza. Stay for everything around it.

The Spot
The Gibson Room is set up as a neighborhood bar on Coral Way, the kind of place built for regulars, but the kitchen works at a higher register than the room suggests. The menu runs from straightforward bar standards to more composed dinner plates, all served in the same casual setting.

The Burger — a double smash patty with special sauce and American cheese — sits alongside Fish & Chips with battered haddock and sauce gribiche, Golden Tilefish with romesco and farro verde, and a Shrimp Andouille Etouffee built on aged Carolina rice and preserved tomatoes. Charcuterie and Parisian Gnocchi round out a menu that also includes a Roasted Chicken Ballotine with maple and boniato, and a Tamal En Cazuela finished with foie gras and crispy duck chicharron.

The flan — made with foie gras and rum-drunken figs — has been a fixture of the menu since the restaurant's early days and remains its best-known dessert. The Gibson Room was selected for Michelin's 2026 Miami guide.
