Sushi by Hidden seats only 10 guests at a time around a zen-like counter, where a hand-selected 12-piece sushi tasting changes daily depending on what's available at market. Chef Marcos Juarez curates the menu alongside rotating chefs from the original Hidden Omakase concept, with everyone working the counter and serving pieces directly to guests. Dishes have included akami with chili garlic and fuji apple, engawa with finger lime, and tom yum-marinated ikura, built using techniques like dry-aged fish and ingredients sourced from Japan and elsewhere.

Juarez joined Hidden Omakase in November 2022 after more than a decade in kitchens, including time at Sushi NiNi and work on Uchi's Denver and Miami openings. He now leads both Hidden Omakase and Sushi by Hidden.

Regulars describe the pace as fast-moving — a trait some find efficient and others find rushed — while the fish and the pricing have built a reputation as a genuine value find tucked into Rice Village.
