Hidden Omakase runs as a single-format sushi counter in Houston's Galleria, seating 18 guests around an open bar. Chef Marcos Juarez, who spent time at Uchi before joining the project, leads the kitchen alongside chefs Kaelyb and Kalef, building each night's tasting menu around fish and ingredients sourced from Japan and elsewhere.
The room is intentionally small, meant to put guests on a first-name basis with the chefs working in front of them rather than at a distance.
