Nobie's works out of a tiny house in Montrose, and the scale is the point. The room is small enough that nothing about it feels accidental — warm light, vinyl records turning somewhere in the back, a mood that reads as romantic without trying too hard to be. Farm-to-table gets used loosely most places; here it shows up as a menu that actually moves, built around whatever's good right now rather than a fixed identity the kitchen defends season after season.

The Texas tartare is the dish people keep circling back for, and it's earned that loyalty — but the real case for Nobie's is that no single dish has to carry it. The kitchen treats the menu as a living thing, which means a meal here in one season doesn't look like a meal here in the next. That's a harder trick to sustain than a signature plate, and Nobie's has kept pulling it off.

Back-to-back Bib Gourmand recognitions from the Michelin Guide confirm what the room already tells you: this isn't a restaurant coasting on a good concept. It's a small kitchen staying sharp on purpose, in a space too charming to feel like it's trying that hard.

The Spot
Nobie's takes its name from chef Martin Stayer's grandmother, and the restaurant on Colquitt Street leans into that personal, unpretentious feel — the team describes the dining room as their own living room, vinyl playing all day, lights dim, volume up, with a hip-hop collection that comes out on Saturday nights.

The kitchen runs a curated menu of 20 to 25 daily items that changes with the seasons, built on Gulf Coast seafood delivered daily alongside produce and meat from a roster of regional farms and purveyors. Dessert pies have become their own draw, served with vanilla bean whipped cream and available as whole orders for larger groups.

Martin Stayer serves as executive chef, with Sara Stayer as sommelier and Zebulon Fletcher as managing partner and wine director. Nobie's has earned a Michelin Bib Gourmand in both 2024 and 2025, and holds a spot on the Eater 38 alongside a 9.2 score from The Infatuation.
