El Hidalguense

El Hidalguense cooks the food of Hidalgo state, and it does not soften the style for Houston. Barbacoa here means lamb, stewed until it falls apart, served with its own consommé for dipping and drinking. The goat comes roasted and drenched in a chile sauce with real depth, plated simple with fresh corn tortillas that do the work a tortilla is supposed to do. This is not a menu built to please everyone. It is a menu built to be correct.

Breakfast is where the place shows its range. Huastecas layers a roasted salsa over scrambled eggs and tortillas, with refried beans and cecina alongside, and it reads as a specific regional dish rather than a generic plate of eggs with salsa dumped on top. The kitchen understands that rusticity is a technique, not an excuse — the lamb and goat both take real time, and it shows in the texture.

The recognition backs up what the plates already argue. A spot on the New York Times' national restaurant list is not handed to a place coasting on nostalgia. El Hidalguense earned it by doing one region's cooking with total conviction, in a corner of Northwest Houston most of the city still hasn't found.
