Milly's Pizza In The Pan started as a ghost kitchen before opening as a full restaurant in West Town in 2020. Robert Maleski built it as a tribute to his grandmother, who taught him to cook, and to Chicago pan-pizza figure Burt Katz, whose pies pushed Maleski from eating pizza to making it himself.

The kitchen turns out a limited number of pan pizzas each day, made with what the restaurant describes as the best ingredients available. That daily cap has become part of the identity — regulars plan around ordering online to make sure a pizza is actually available, and the shop has built a reputation for ingredient freshness alongside a more divided reputation for consistency from visit to visit. West Town is one of two Chicago locations, along with a Lakeview spot.

Milly's has been reviewed by The Infatuation and named to Time Out Chicago's 2025 best-of list.
