La Catedral Cafe's New Eastside location extends a Guadalajara-inspired breakfast and brunch concept into the Chicago Loop. Chef Ambrocio Gonzalez, who grew up in Guadalajara, Jalisco cooking for himself as a kid before eventually moving to Chicago and graduating from Oakton College, built the menu around his chilaquiles, the restaurant's top-selling dish.
Beyond chilaquiles, the menu runs through pancakes, french toast, and crepes filtered through a Mexican kitchen, alongside a coffee bar that works Mexican syrups and artisanal sweeteners into both hot and cold drinks.
