Ahuevo runs as a ghost kitchen, cooking out of an existing restaurant's space and serving diners through dine-in, takeout, and delivery apps rather than a standalone storefront. Founder Laz built the menu around cage-free eggs, local bread, and what the restaurant calls straight-up comfort food, and the concept now spans two Chicago locations.
The menu centers on egg sandwiches on toasted brioche — the namesake Ahuevo with soft scrambled eggs, green onions, cheddar, caramelized onions, and sriracha mayo, alongside bacon, sausage, turkey, and Canadian bacon versions, plus a Tuna Con Huevos built on tuna salad, hard-boiled eggs, red onion, celery, and tomato. Breakfast burritos come stuffed with scrambled eggs, Chihuahua cheese, tater tots, house-made chipotle mayo, and a choice of meat, with a vegan version built on vegan eggs and chorizo. Smash burgers stack up to four American beef patties with melted American cheese, and sides run to tater tots topped with egg, cheese, and sriracha mayo.
