Old Ebbitt is real Washington and has been since 1856 — gas lamps, taxidermy, the low hum of proximity to power. As a room, it's the city explaining itself to visitors, and it does that well.

The kitchen has never had to participate. Club-standard American fills the menu because the location fills the room, and nothing about the cooking has needed to try within living memory. Have a drink in the history. Dinner deserves a restaurant that earns it nightly.
