Peyrassol West is the second act for Scott Cory and Sachia Tinsley, previously of Peyrassol Café at Southport, who opened this Normandy Park spot as a quieter, neighborhood-scaled wine bar. The concept runs on four pillars: wine, plates, cocktails, and retail, with a European-inspired food menu built to pair with what's being poured.

The wine cellar holds over 150 boutique bottles, backed up by specialty cocktails, rotating draft beers, spritzes, and hard ciders. Guests can settle in for a glass and a plate, or treat the place as a bottle shop — picking up a retail wine or a specialty pantry item on the way out the door.

It's a small, curated operation built around close attention rather than volume — the kind of spot regulars in Normandy Park have started to treat as their own.
