Joule takes the steakhouse playbook and runs it through a Korean lens, and the swap works better than it has any right to. The centerpiece isn't a ribeye or a filet — it's kalbi short rib, doing the job a steak would do at any other place chasing this formula. The sides refuse to coast: rice cakes turn up with chorizo and mustard greens instead of a twice-baked potato, and where a bread basket would sit, there are scallion pancakes finished with crème fraîche and salmon roe.

The room backs up the joke without undercutting the cooking. Blue Victorian wallpaper printed with ribeyes, a patio worth fighting for a seat on — it reads more like a party than a steakhouse ritual, and that looseness suits food this confident. Nothing here is trying to be a straight-faced chophouse; it's smarter and more fun than that, and it still delivers on the steakhouse promise of a serious protein done right.

The recognition has been consistent rather than a one-off: national list placement, and years of James Beard finalist nods for the chef, stacked from 2016 through 2022. That's not a fluke season. That's a kitchen that found its idea early and kept sharpening it.

The Spot
Joule opened in Wallingford in 2007 and moved to its current home on Stone Way in 2012. Chefs Rachel Yang and Seif built the restaurant around their own take on a modern Korean steakhouse, blending creative and authentic threads of Korean and Asian fusion cooking.

The dining room centers on an open kitchen, letting guests watch the cooking while working through a menu of shareable plates. Dishes that come up often include the galbi burger, smoked tofu, rice cake, bone marrow, and short ribs, alongside a cocktail list and a Pacific Northwest wine program. A heated patio adds outdoor seating next to the intimate main dining room.

Joule has drawn repeated James Beard Foundation recognition over the years, spanning Rising Star Chef, Best Chef, and Outstanding Chef categories, with its most recent finalist nod in 2022. Eater has also named it to its Essential 38 list of Seattle restaurants.
