Sazón builds its case on the moles, and the case is strong. The kitchen treats each one as its own dish rather than a background sauce — a coloradito sharp with guajillo and arbol heat for beef and lamb, a Santa Fe version rounded out with apricot, pecan, and white chocolate for richer proteins, a tomatillo-driven verde that stays bright enough for fish and vegetables. Going a la carte instead of the tasting menu is the smarter play here, because it lets you match the right mole to the right plate instead of accepting one path through the menu.

The Sopa de Amor earns its spot outside the mole conversation entirely, a poblano cream built around blue crab and beef tenderloin that has no real analog on the rest of the menu. The cocktail list holds its own too, built around spirits like sotol that don't show up often this far from the border.

A James Beard Best Chef win in 2022, preceded by a semifinalist nod in 2020, backs up what the plates already argue: this is a downtown Mexican kitchen operating with real specificity, not just ambition.

The Spot
Fernando Olea, a Mexico City native who ran kitchens in Mazatlán and Minneapolis before landing in Santa Fe, opened Sazón with business partners Lawrence and Suzanna Becerra. The restaurant sits two blocks from the Plaza and has been running since 1991, with Olea working a deliberately small menu built on Old Mexico's indigenous and culinary traditions alongside ingredients sourced from around the world.

Mole is central to the kitchen's identity here. Reviewers frequently mention shrimp enchiladas, duck, huitlacoche, zucchini blossoms, sea bass, crab, octopus, and a chocolate mole among the dishes that come out of the kitchen.

Olea won the James Beard Award for Best Chef of the Southwest in 2022, after being named a semifinalist in 2020. Sazón has also received Wine Spectator's Award of Excellence for its wine and cocktail program.
