The Anchovy Bar opened in 2020 as the third restaurant from the Atomic Workshop group, joining State Bird Provisions and The Progress on the same stretch of Fillmore. It's built around a simpler idea than its siblings: a wine bar with a short, tightly focused menu of small dishes centered on perfect ingredients.
The kitchen eats low on the food chain — oysters, clams, mussels, small fish, and seaweeds chosen because they reproduce easily and have a net-positive effect on the ocean. Sourcing leans on small producers who favor traditional and antique processes, and the menu leans into tinned fish and toasted bread alongside its raw bar.
The room is the most intimate and casual of the group's three Fillmore restaurants, built around bar seating with leafy floral arrangements over the bar, wavy ceiling textures, and dark tile accents that lean coastal and romantic without much effort.
